Wraps are the epitome of a straightforward, on-the-go lunch, and this zesty Tuscan rooster salad wrap is a living proof. It’s a balanced meal that’s prepared in minutes. Mix precooked rooster (or leftover rooster), white beans, spinach, tomato, cheese and basil — then wrap, roll and go.
Tuscan Rooster Salad Wrap
Components
4 oz. precooked or leftover rooster breasts
1/4 cup white beans, drained and rinsed
3 recent basil leaves, chopped (or 1/2 teaspoon dried basil)
1 tbsp shredded Parmesan cheese
1/2 medium lemon, juiced
2 tbsp plain 2% Greek yogurt
Salt and pepper, to style
¼ cup child spinach
3 medium cherry tomatoes, sliced
1 giant (10-inch) whole-wheat flour tortilla
Instructions
Reheat leftover rooster, if desired. As soon as heat, chop rooster into bite-size items.
In a small bowl, add rooster, white beans, basil, cheese, lemon juice and yogurt. Season with salt and pepper to style.
Layer spinach and tomatoes on the tortilla, then add rooster combination. Fold either side of the tortilla towards the middle till the perimeters virtually contact. Tightly fold the decrease half of the tortilla up over the fillings. Proceed rolling tightly upward, tucking within the left and proper sides as you go. Slice in half with a serrated knife, and serve.
